Ingredients

2 whole English muffins, split in half

4 large eggs

1/2 cup shredded mozzarella cheese

1/4 cup cooked and crumbled breakfast sausage (or any preferred protein such as bacon or vegetables)

1/4 cup diced bell peppers (any color)

1/4 cup chopped green onions

1/4 tsp garlic powder

1/4 tsp onion powder

Salt and pepper to taste

Olive oil for greasing

Optional: red pepper flakes for heat, fresh herbs for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.

Prepare the Muffins: Place the split English muffins cut-side up on the prepared baking sheet. Lightly brush or spray the tops with olive oil for extra crispiness.

Cook the Eggs: In a non-stick skillet, fry the eggs sunny-side up (or to your preferred doneness). Season with salt, pepper, garlic powder, and onion powder. Remove from heat once cooked.

Add Toppings: Sprinkle each muffin half with shredded mozzarella cheese, then layer on the crumbled sausage, bell peppers, and top with the fried eggs.

Bake: Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is bubbly and golden brown.

Garnish: Remove from the oven and sprinkle chopped green onions and optional red pepper flakes and fresh herbs on top.

Serve: Slice into halves or quarters if desired, and serve hot for a delightful breakfast treat!
