Ingredients
  

  • 1 cup almond flour
  • ½ cup coconut flour
  • ½ cup erythritol or stevia
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ cup unsweetened applesauce
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ cup chopped nuts
  • ¼ cup unsweetened dark chocolate chips
  • sugar-free sprinkles optional

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix almond flour, coconut flour, erythritol, baking soda, salt, cinnamon, and ginger.
  • In another bowl, whisk applesauce, egg, and vanilla until smooth.
  • Combine the wet mixture with the dry ingredients to form a dough.
  • If too crumbly, add a tablespoon of water or applesauce.
  • Fold in chopped nuts and dark chocolate chips if using.
  • Scoop dough into balls and place on the baking sheet with space in between.
  • Flatten each cookie slightly and add sprinkles if desired.
  • Bake for 10-12 minutes until edges are light golden brown.
  • Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
