Ingredients

2 boneless, skinless chicken thighs

2 tablespoons chili paste (or to taste)

1 tablespoon soy sauce

1 tablespoon sesame oil

4 cups chicken broth

2 packs of instant ramen noodles (discard the seasoning packet)

1 cup mushrooms, sliced (shiitake or button)

1 cup baby spinach

2 green onions, chopped

2 cloves garlic, minced

1/2 cup heavy cream

Salt and pepper to taste

Sesame seeds for garnish

Instructions

Marinate the Chicken: In a bowl, combine the chili paste, soy sauce, sesame oil, and a pinch of salt and pepper. Add the chicken thighs, coating them well. Let it marinate for at least 15 minutes.

Cook the Chicken: In a skillet over medium heat, cook the marinated chicken thighs for about 6-7 minutes on each side or until cooked through. Remove from the skillet and let it rest before slicing it into strips.

Prepare the Broth: In a large pot, bring the chicken broth to a simmer. Add the minced garlic and sliced mushrooms. Let it cook for about 5 minutes until the mushrooms are tender.

Cook the Ramen: Add the ramen noodles to the broth and cook according to package instructions, usually about 3-4 minutes. Stir in the baby spinach until wilted.

Make the Creamy Sauce: In a small bowl, whisk together the heavy cream and remaining chili paste. Carefully add this mixture to the simmering broth, stirring well to combine.

Serve: Divvy up the ramen into bowls. Top with the sliced chicken, chopped green onions, and sprinkle sesame seeds on top for garnish.

Enjoy: Serve hot and enjoy the spicy, creamy goodness of your Fiery Chicken Ramen!
