Ingredients
  

  • 2 cups cooked rotini pasta
  • 1 pound ground turkey or beef
  • 1 can black beans drained and rinsed
  • 1 can sweet corn drained
  • 1 can diced tomatoes with green chilies
  • 1 cup shredded sharp cheddar cheese
  • 1 cup creamy sour cream
  • 1 packet taco seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ground cumin
  • Salt and black pepper to taste
  • ¼ cup fresh cilantro chopped (for garnish)
  • Tortilla chips for serving alongside

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, cook the ground turkey or beef over medium heat for 5-7 minutes until browned.
  • Drain excess fat and add taco seasoning, garlic powder, onion powder, cumin, salt, and pepper. Cook for 2 more minutes.
  • In a large bowl, combine cooked rotini, black beans, sweet corn, diced tomatoes, and the meat mixture. Mix well.
  • Fold in sour cream and half of the cheddar cheese until evenly distributed.
  • Transfer to a greased 9x13 inch casserole dish and spread evenly.
  • Top with remaining cheddar cheese.
  • Bake for 25-30 minutes until cheese is melted and bubbly.
  • Allow to cool for a few minutes before garnishing with cilantro.
  • Serve hot with tortilla chips.
