2 cups pumpkin puree (canned or fresh)

3 large eggs

1/2 cup almond butter (or any nut/seed butter of your choice)

1/3 cup pure maple syrup or honey

1 teaspoon vanilla extract

2 teaspoons baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/4 teaspoon ground ginger (optional)

1/2 cup dark chocolate chips or chopped nuts (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    In a large mixing bowl, combine the pumpkin puree, eggs, almond butter, maple syrup, and vanilla extract. Mix well until smooth.

      In another bowl, whisk together the baking soda, cinnamon, nutmeg, salt, and ginger.

        Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.

          If desired, fold in the chocolate chips or chopped nuts to add extra flavor and texture.

            Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

              Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Allow the muffins to cool in the tin for 5-10 minutes before transferring them to a wire rack to cool completely.
