Ingredients

4 ripe bananas

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon baking powder

1/2 teaspoon salt

1/4 cup granulated sugar

1 teaspoon ground cinnamon (plus extra for garnish)

1 cup cold sparkling water

Vegetable oil (for frying)

For the Cinnamon Butter Sauce:

1/2 cup unsalted butter

1/2 cup brown sugar

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

Pinch of salt

Instructions

Prepare the Bananas: Peel the bananas and slice them in half lengthwise, then cut each half into 2-3 pieces. Set aside.

Make the Batter: In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, granulated sugar, and ground cinnamon. Gradually whisk in the cold sparkling water until you achieve a smooth batter. The batter should be thick enough to coat the back of a spoon.

Heat the Oil: In a deep skillet or frying pan, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; it should sizzle and rise to the surface.

Fry the Bananas: Dip each banana piece into the batter, allowing the excess to drip off before placing it carefully into the hot oil. Fry in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes per side or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Make the Cinnamon Butter Sauce: In a saucepan over medium heat, melt the unsalted butter. Stir in the brown sugar, ground cinnamon, vanilla extract, and pinch of salt. Cook for about 2-3 minutes, stirring constantly until the mixture is smooth and bubbly.

Serve: Arrange the fried banana pieces on a serving plate. Drizzle the warm cinnamon butter sauce generously over the top. Sprinkle with a touch of extra ground cinnamon for garnish.

Enjoy: Serve immediately while warm for the best experience. Pair with a scoop of vanilla ice cream for an added treat!
