Drizzled with a creamy honey-lime sauce and topped with coconut flakes and mint, they are as beautiful as they are tasty. Ingredients
  

8 small corn or flour tortillas

1 cup diced pineapple

1 cup diced strawberries

1 cup diced mango

1 cup raspberries

1/2 cup whipped cream (or coconut cream for a vegan option)

2 tablespoons honey or maple syrup

1 teaspoon lime juice

1/4 teaspoon cinnamon

Fresh mint leaves for garnish

Optional: Coconut flakes for topping

Instructions
 

In a large mixing bowl, combine the diced pineapple, strawberries, mango, and raspberries. Gently toss the fruits together.

    In a small bowl, mix the whipped cream (or coconut cream), honey (or maple syrup), lime juice, and cinnamon until smooth.

      Warm the tortillas in a skillet over medium heat for about 30 seconds on each side, or until they are pliable and slightly toasted.

        To assemble the tacos, place a spoonful of the mixed fruit in the center of each tortilla.

          Drizzle the cream mixture over the fruit and sprinkle with coconut flakes if desired.

            Fold the tortillas in half to form a taco and garnish with fresh mint leaves.
