Ingredients
  

  • 9-12 pieces lasagna noodles
  • 2 cups ricotta cheese
  • 1 large egg
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach chopped
  • 1 medium zucchini thinly sliced
  • 1 piece bell pepper diced
  • 1 cup mushrooms sliced
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 3 cups marinara sauce
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper
  • for garnish fresh basil leaves

Instructions

  • Preheat your oven to 375°F (190°C).
  • Cook traditional lasagna noodles according to package instructions, then drain.
  • Heat olive oil in a skillet over medium heat, add onion and garlic, and cook until translucent.
  • Add zucchini, bell pepper, and mushrooms; sauté for 5-7 minutes until tender.
  • Fold in spinach and season with salt, pepper, oregano, and basil; remove from heat.
  • In a bowl, mix ricotta cheese with egg, adding salt and pepper.
  • Spread marinara sauce in a baking dish, layer noodles, ricotta mixture, vegetables, and mozzarella.
  • Repeat layers, finishing with noodles, marinara, mozzarella, and Parmesan.
  • Cover with foil and bake for 25 minutes, then remove foil and bake for another 15-20 minutes.
  • Let cool for 10-15 minutes before slicing and serving, garnishing with basil if desired.
