Garlic Bread Grilled Cheese

4 slices of thick sourdough bread

4 tablespoons unsalted butter, softened

2 cloves garlic, minced

1 teaspoon dried parsley (or 1 tablespoon fresh parsley, chopped)

1 cup shredded mozzarella cheese

1/2 cup sharp cheddar cheese, shredded

Salt and black pepper, to taste

Optional: Red pepper flakes for a spicy kick

Prepare the Garlic Butter: In a small bowl, combine the softened butter, minced garlic, dried parsley, salt, and pepper. Mix until well combined.

    Butter the Bread: Spread a generous layer of the garlic butter mixture on one side of each slice of sourdough bread.

      Assemble the Sandwich: On the unbuttered side of two slices, layer the mozzarella and cheddar cheeses. If desired, sprinkle a pinch of red pepper flakes for extra flavor. Place the other two slices on top, buttered sides facing out.

        Heat the Pan: In a large skillet or griddle, heat over medium heat. Once hot, place the sandwiches in the skillet.
