Garlic Butter Steak and Potatoes Skillet

1 lb ribeye or sirloin steak, cut into bite-sized pieces

1 lb baby potatoes, halved

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme leaves (or ½ teaspoon dried)

Salt and pepper, to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes: In a large pot, bring water to a boil and add halved baby potatoes. Cook for about 10-15 minutes until fork-tender. Drain and set aside.

    Sear the Steak: In a large skillet, heat olive oil over medium-high heat. Season the steak pieces with salt and pepper. Add the steak to the skillet and sear for 2-3 minutes on each side until browned and cooked to your preferred doneness. Remove steak from the skillet and transfer it to a plate, covering it to keep warm.

      Cook the Potatoes: In the same skillet, add 2 tablespoons of butter. Once melted, add the boiled potatoes (cut side down) and cook until crispy and golden brown, about 5-7 minutes.

        Add Garlic and Herbs: Push the potatoes to one side of the skillet. On the other side, add the remaining 2 tablespoons of butter and the minced garlic. Sauté for about 1-2 minutes until fragrant. Mix in the fresh rosemary and thyme.

          Combine Everything: Add the steak back into the skillet with the potatoes and garlic butter. Toss everything together gently to combine, ensuring that the steak and potatoes are coated in the buttery garlic sauce.
