Ingredients

1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tbsp unsalted butter

4 cloves garlic, minced

1 tbsp fresh parsley, chopped

1 tsp paprika

1 tsp salt

½ tsp black pepper

2 tbsp olive oil

Optional: Fresh rosemary for garnish

Instructions

Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 15 minutes or until tender. Drain and set aside.

Sear the Steak: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the steak cubes with salt, pepper, and paprika. Once hot, add the steak bites to the skillet in a single layer. Sear for about 2-3 minutes on each side until browned but not fully cooked. Remove the steak from the skillet and set aside.

Cook the Potatoes: In the same skillet, add the boiled potatoes. Cook them for about 5-7 minutes, stirring occasionally, until they are golden brown and crispy on the outside.

Combine and Flavor: Lower the heat to medium. Push the potatoes to one side of the skillet. Add the butter and minced garlic to the empty side and cook for about 1 minute until fragrant. Then, add the steak bites back to the skillet.

Final Touches: Toss the steak and potatoes in the garlic butter to combine. Cook for an additional 2-3 minutes until the steak is cooked to your liking (medium-rare is approximately 130°F). Stir in the chopped parsley for freshness.

Serve: Serve immediately, garnished with optional fresh rosemary. Enjoy your delicious Garlic Butter Steak Bites and Potatoes!
