Garlic Butter Steak Bites and Potatoes

1 lb (450g) sirloin steak, cut into 1-inch cubes

1 lb (450g) baby potatoes, halved

3 tablespoons unsalted butter

4 cloves garlic, minced

2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried)

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Potatoes: In a large pot, add the halved baby potatoes, cover with water, and season with salt. Bring to a boil over medium-high heat and cook for about 10-12 minutes, or until fork-tender. Drain and set aside.

    Sear the Steak Bites: While the potatoes are cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the steak cubes with salt, pepper, and smoked paprika. Once the oil is hot, add half of the steak bites in a single layer. Avoid overcrowding the pan. Sear for 2-3 minutes on one side until browned, then flip and cook for another 1-2 minutes for medium-rare. Remove the cooked steak from the pan and set aside. Repeat with the remaining steak bites.

      Make the Garlic Butter Sauce: In the same skillet, reduce heat to medium and add the remaining 2 tablespoons of olive oil and the butter. Once the butter is melted, add the minced garlic and rosemary. Sauté for about 30 seconds until fragrant.

        Combine and Toss: Add the cooked steak bites back into the skillet, along with the cooked potatoes. Toss everything in the garlic butter sauce until evenly coated and heated through. Adjust seasoning with additional salt and pepper if necessary.

          Serve: Remove from heat and garnish with chopped fresh parsley. Serve immediately for a hearty and delicious meal.
