  • 4 pieces boneless skinless chicken thighs
  • 3 tablespoons white or yellow miso paste
  • 4 cloves garlic finely minced
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon freshly grated ginger
  • 2 pieces green onions finely chopped (for garnish)

Instructions

  • In a medium mixing bowl, blend together the miso paste, minced garlic, soy sauce, honey, rice vinegar, sesame oil, grated ginger, and a pinch of salt and pepper.
  • Place the chicken thighs into the bowl with the marinade, ensuring each piece is generously coated. Cover and refrigerate for at least 30 minutes.
  • Preheat the oven to 400°F (200°C).
  • Line a baking dish with parchment paper or grease it lightly. Arrange the marinated chicken thighs in a single layer.
  • Bake the chicken for 25-30 minutes until it reaches an internal temperature of 165°F (75°C).
  • Baste the chicken with the remaining marinade halfway through cooking.
  • Switch the oven to broil and broil the chicken for an additional 2-3 minutes to caramelize the exterior.
  • Remove the chicken from the oven and let it rest for a few minutes.
