Ingredients

8 oz (225 g) fresh mushrooms (cremini or button), sliced

3 tbsp olive oil

3 cloves garlic, minced

1/4 tsp red pepper flakes (optional)

Salt and black pepper, to taste

1 tbsp fresh thyme leaves (or 1 tsp dried thyme)

1 tbsp fresh parsley, chopped (for garnish)

4 slices of crusty bread (e.g., sourdough or ciabatta)

1/2 cup grated Parmesan cheese

Balsamic reduction (for drizzling, optional)

Instructions

Sauté the Mushrooms: In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes, stirring occasionally, until they are golden brown and have released their moisture.

Add Garlic and Seasonings: Stir in the minced garlic and red pepper flakes (if using). Cook for an additional 1-2 minutes until the garlic is fragrant. Season with salt, black pepper, and thyme. Remove the skillet from heat and set aside.

Toast the Bread: Preheat your oven broiler. Arrange the slices of crusty bread on a baking sheet. Toast them under the broiler for 1-2 minutes on each side until they are golden and crispy.

Assemble the Toasts: Remove the toasted bread slices from the oven. Top each slice generously with the garlic mushroom mixture.

Add Cheese and Final Touches: Sprinkle grated Parmesan cheese over the mushroom-topped toasts. Return them to the oven and broil for an additional 2-3 minutes, until the cheese is bubbly and slightly browned.

Garnish and Serve: Remove the toast from the oven, garnish with fresh parsley, and drizzle with balsamic reduction if desired. Serve warm.
