Ingredients

12 oz linguine or spaghetti

4 tablespoons olive oil

6 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

1 cup fresh spinach (optional)

2 tablespoons chopped fresh parsley (for garnish)

Zest of 1 lemon (optional)

Extra Parmesan for serving (optional)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta and set aside.

Prepare the Sauce: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

Add Cream: Lower the heat and pour in the heavy cream. Stir continuously for about 2-3 minutes until the cream is heated through.

Incorporate Cheese: Gradually add the Parmesan cheese, stirring until melted and well combined. If the sauce is too thick, add a bit of the reserved pasta water until you reach the desired consistency.

Season: Stir in the red pepper flakes, and season with salt and black pepper to taste. If using, add the fresh spinach and mix until wilted.

Combine Pasta and Sauce: Add the drained pasta to the skillet and toss to coat it in the creamy garlic sauce. If too dry, add more reserved pasta water as needed.

Serve: Remove from heat, and if desired, stir in lemon zest for a bright flavor. Serve immediately, garnished with chopped parsley and extra Parmesan on the side.
