  • 1 cup unsalted butter softened
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ¼ teaspoon salt
  • 8 oz cream cheese softened
  • ½ cup powdered sugar
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon pure vanilla extract for cheesecake filling
  • Optional: crushed gingerbread cookies or cinnamon sugar for garnish

Instructions

  • In a large mixing bowl, combine softened butter, brown sugar, and granulated sugar. Beat until light and fluffy.
  • Add the egg and vanilla extract, mixing until fully incorporated.
  • In a separate bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  • Cover the bowl with plastic wrap and refrigerate the dough for about 30 minutes.
  • In another bowl, beat cream cheese with powdered sugar, lemon juice, and vanilla extract until smooth.
  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Take a tablespoon of chilled dough, flatten it, and place a teaspoon of cheesecake filling in the center. Fold the dough over and roll into a ball.
  • Place the filled dough balls on the prepared baking sheet and repeat.
  • Bake for 12-15 minutes until edges are lightly golden. Cool on a wire rack.
