  • 1 cup shredded sharp cheddar cheese
  • 1 cup diced bell peppers
  • 1 cup finely diced onion
  • 8 large eggs
  • 1 cup whole milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon smoked paprika
  • 1 tablespoon extra virgin olive oil
  • fresh parsley finely chopped (for garnish)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, add olive oil, then sauté diced onions and bell peppers for 5-7 minutes until soft.
  • In a mixing bowl, combine thawed hash browns, sautéed vegetables, and shredded cheddar cheese.
  • Grease a 9x13 inch baking dish and spread the hash brown mixture evenly.
  • In another bowl, whisk together eggs, milk, garlic powder, onion powder, salt, black pepper, and smoked paprika.
