Ingredients

500g boneless chicken thighs, cut into bite-sized pieces

200g plain yogurt

2 tablespoons lemon juice

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon ground turmeric

1 teaspoon garam masala

1 teaspoon cayenne pepper (adjust to taste)

Salt, to taste

4 tablespoons vegetable oil

1 large onion, finely chopped

2 green chilies, slit lengthwise (optional)

400g canned tomatoes (crushed)

200ml heavy cream

Fresh cilantro, for garnish

Steamed basmati rice or naan, for serving

Instructions

Marinate the Chicken: In a large bowl, mix the yogurt, lemon juice, garlic, ginger, cumin, coriander, turmeric, garam masala, cayenne pepper, and salt. Add the chicken pieces to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Cook the Chicken: Preheat your grill or a large pan over medium-high heat. Remove the chicken from the marinade, shaking off any excess. Add the oil to the pan, and once hot, cook the chicken pieces until they are browned and slightly charred on the edges – about 5-7 minutes. Remove from the heat and set aside.

Prepare the Sauce: In the same pan, add the chopped onion and green chilies (if using). SautΓ© until the onions are soft and golden brown. This should take about 8-10 minutes.

Add Tomatoes: Stir in the crushed tomatoes and cook for another 5 minutes, mixing well to incorporate the flavors. Season with salt to taste.

Combine Chicken and Sauce: Add the grilled chicken back into the pan, mixing well with the sauce. Pour in the heavy cream and let the mixture simmer for 10-15 minutes, allowing the flavors to meld together. Adjust seasoning if necessary.

Garnish and Serve: Once ready, remove from heat, garnish with freshly chopped cilantro, and serve hot with steamed basmati rice or warm naan.
