Greek Style Loaded Hummus

Ingredients
  

1 can (15 oz) chickpeas, rinsed and drained

1/4 cup tahini

2 tablespoons olive oil, plus more for drizzling

2 tablespoons lemon juice

1 medium garlic clove, minced

1/2 teaspoon ground cumin

Salt, to taste

1/4 cup Greek yogurt

1/2 cup diced cucumber

1/2 cup cherry tomatoes, halved

1/4 cup Kalamata olives, pitted and chopped

1/4 cup crumbled feta cheese

2 tablespoons chopped fresh parsley

Pita chips or fresh veggies for serving

Instructions
 

In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, minced garlic, ground cumin, and a pinch of salt. Blend until smooth and creamy, adding a little water if needed to reach your desired consistency.

    Once the hummus is smooth, taste and adjust seasoning as necessary. Transfer the hummus to a serving bowl.

      In a separate bowl, mix the diced cucumber, cherry tomatoes, Kalamata olives, crumbled feta, and chopped parsley. Drizzle a teaspoon of olive oil and season with a pinch of salt. Toss to combine.

        Spoon the veggie and feta mixture over the hummus.

          Drizzle a little more olive oil over the top for flavor and presentation. Optionally, sprinkle with extra cumin or paprika for a pop of color.

            Serve with pita chips or fresh veggies for dipping.
