1 teaspoon cumin

Juice of 1 lime

For the Corn Salsa:

1 cup corn kernels (fresh, frozen, or canned)

1 medium red bell pepper, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced (optional)

1/2 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Creamy Garlic Sauce:

1/2 cup Greek yogurt or sour cream

2 tablespoons mayonnaise

2 cloves garlic, minced

Juice of 1/2 lemon

Salt and pepper to taste

For Assembly:

2 cups cooked quinoa or rice

1 large avocado, sliced

Lime wedges and extra cilantro for garnish

Marinate the Shrimp: In a bowl, combine the shrimp, olive oil, minced garlic, smoked paprika, cumin, lime juice, salt, and pepper. Allow to marinate for at least 15 minutes.
