Grilled Tandoori Chicken

1.5 lbs chicken pieces (legs and thighs preferred)

1 cup plain yogurt

2 tablespoons tandoori masala (store-bought or homemade)

1 tablespoon ginger paste

1 tablespoon garlic paste

1 tablespoon lemon juice

1 tablespoon vegetable oil

1 teaspoon smoked paprika (for color)

1 teaspoon turmeric powder

1 teaspoon ground cumin

1 teaspoon cayenne pepper (adjust to taste)

Salt, to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Marinade: In a large mixing bowl, combine the yogurt, tandoori masala, ginger paste, garlic paste, lemon juice, vegetable oil, smoked paprika, turmeric powder, ground cumin, cayenne pepper, and salt. Whisk until smooth.

    Marinate the Chicken: Add the chicken pieces to the marinade, ensuring they are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, ideally overnight, to allow the flavors to penetrate.

      Preheat the Grill: About 30 minutes before you're ready to grill, preheat your grill to medium-high heat (about 400°F/200°C).

        Prepare the Chicken for Grilling: Remove the marinated chicken from the refrigerator and shake off excess marinade. Let the chicken sit at room temperature for about 15 minutes.

          Grill the Chicken: Brush the grill grates with oil to prevent sticking. Place the chicken on the grill and cook for about 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through. Adjust the heat as necessary to prevent burning.

            Char for Extra Flavor: For an authentic smoky taste, once the chicken is cooked through, move it to a cooler part of the grill and close the lid for a few minutes to let it char slightly without overcooking.

              Serve: Remove the chicken from the grill and let it rest for a few minutes. Garnish with freshly chopped cilantro and serve with lime wedges on the side.
