Ground Turkey Sweet Potato Casserole

Ingredients
  

1 lb ground turkey

3 medium sweet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

1 cup black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 tsp cumin

1 tsp smoked paprika

1/2 tsp chili powder

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

1/4 cup olive oil

Fresh cilantro or parsley for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet over medium heat, add the olive oil. Once hot, sauté the chopped onion until translucent, about 5 minutes.

      Add the minced garlic and cook for an additional minute until fragrant.

        Add the ground turkey to the skillet, breaking it up with a spoon. Season with cumin, smoked paprika, chili powder, salt, and pepper. Cook until the turkey is browned and cooked through, about 7-10 minutes.

          In a large mixing bowl, combine the cooked turkey mixture with black beans, corn, and half of the shredded cheddar cheese (if using). Mix well.

            In a separate bowl, boil the diced sweet potatoes in salted water for about 10 minutes until tender but not mushy. Drain and allow to cool slightly.

              In a large casserole dish, layer the sweet potatoes at the bottom, then spread the turkey mixture evenly on top.

                If you reserved cheddar cheese, sprinkle it evenly over the turkey layer.

                  Bake in the preheated oven for 25-30 minutes or until the cheese is melted and the casserole is heated through.

                    Remove from the oven, let it cool for a few minutes, then garnish with fresh cilantro or parsley before serving.
