Ground Turkey Sweet Potato Skillet

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 red bell pepper, diced

1 small yellow onion, chopped

2 cloves garlic, minced

1 cup spinach, roughly chopped

1 tsp ground cumin

1 tsp smoked paprika

1 tsp chili powder

Salt and pepper to taste

2 tbsp olive oil

Fresh cilantro or parsley for garnish (optional)

Instructions

Heat the Oil: In a large skillet, heat the olive oil over medium heat.

    Cook the Sweet Potatoes: Add the diced sweet potatoes to the skillet. Season with salt and pepper, and cook for about 5-7 minutes, stirring occasionally, until they start to soften.

      Add the Aromatics: Add the chopped onion, diced bell pepper, and minced garlic to the skillet. Sauté for another 5 minutes or until the vegetables are tender and the onions are translucent.

        Brown the Turkey: Push the sweet potato mixture to the side of the skillet and add the ground turkey to the empty side. Cook the turkey for about 5 minutes, breaking it apart with a spatula, until it is browned and cooked through.

          Spice It Up: Once the turkey is browned, stir in the ground cumin, smoked paprika, chili powder, and any additional salt and pepper to taste. Mix everything together to ensure the spices coat all the ingredients.

            Add Spinach: Fold in the chopped spinach and cook for another 2-3 minutes until the spinach wilts down.

              Serve: Remove from heat and garnish with fresh cilantro or parsley if desired. Serve warm in bowls or on plates.
