1 lb ground turkey

2 tablespoons vegetable oil (for cooking)

1 bell pepper (sliced, any color)

1 medium onion (sliced)

2 cups broccoli florets

2 carrots (julienned)

3 cloves garlic (minced)

1 tablespoon fresh ginger (grated)

¼ cup low-sodium soy sauce

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon cornstarch (optional, for thickening)

2 green onions (sliced, for garnish)

Sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Instructions
 

Prepare the Sauce: In a small bowl, mix the soy sauce, honey (or maple syrup), rice vinegar, and sesame oil. If you like a thicker sauce, dissolve the cornstarch in 1 tablespoon of water and add it to the mixture. Set aside.

    Cook the Turkey: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the ground turkey, breaking it up with a spatula. Cook for about 5-7 minutes until browned and cooked through. Remove the turkey from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onion, bell pepper, broccoli, and carrots. Sauté for about 5 minutes or until the vegetables are tender-crisp.

        Add Garlic and Ginger: Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

          Combine Together: Return the cooked ground turkey to the skillet with the vegetables. Pour the sauce over the mixture, stirring to combine. Cook for another 2-3 minutes, allowing the sauce to coat everything and heat through.

            Serve: Remove from heat, garnish with sliced green onions and sesame seeds. Serve hot over cooked rice or quinoa.
