Ingredients

1 pre-made graham cracker pie crust

1 cup crushed pineapple, drained

1 cup sweetened shredded coconut

1/2 cup macadamia nuts, chopped

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

1/4 cup toasted coconut flakes (for garnish)

Fresh pineapple slices (for garnish)

Instructions

Prepare the Cream Cheese Mixture: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined and creamy.

Add Pineapple and Coconut: Gently fold in the crushed pineapple and shredded coconut into the cream cheese mixture. Make sure all ingredients are evenly incorporated.

Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the pineapple mixture until fully combined, creating a light and fluffy texture.

Combine with Macadamia Nuts: Fold in the chopped macadamia nuts, ensuring they're evenly distributed throughout the mixture.

Fill the Pie Crust: Pour the creamy mixture into the pre-made graham cracker crust, spreading it evenly. Cover with plastic wrap and refrigerate for at least 4 hours or until set.

Garnish and Serve: Once set, remove from the refrigerator and top with toasted coconut flakes and fresh pineapple slices for decoration. Slice and serve chilled!
