Ingredients
  

1 lb ground turkey or lean ground beef

1 cup black beans, rinsed and drained

1 cup corn, frozen or fresh

1 small onion, diced

2 cloves garlic, minced

1 can (14 oz) diced tomatoes with green chilies

2 cups enchilada sauce (store-bought or homemade)

1 tsp chili powder

1 tsp cumin

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

1 1/2 cups cooked brown rice or quinoa

1/2 cup shredded low-fat cheese (optional)

Fresh cilantro, chopped (for garnish)

Sliced avocado (for serving)

Instructions
 

Cook the Meat: In a large skillet over medium heat, add the ground turkey or beef. Cook until browned, breaking it apart with a spatula. This should take about 5-7 minutes.

    Sauté Vegetables: Add in the diced onion and garlic. Sauté for another 3-4 minutes until the onion is translucent.

      Mix Ingredients: Stir in the black beans, corn, diced tomatoes (with juice), enchilada sauce, chili powder, cumin, smoked paprika, salt, and black pepper. Cook for an additional 5 minutes, allowing the flavors to meld together.

        Add Rice/Quinoa: Stir in the cooked brown rice or quinoa until everything is well combined and heated through.

          Cheese Topping (Optional): If using cheese, sprinkle it evenly over the skillet mixture. Cover the skillet and let it cook for another 2-3 minutes until the cheese is melted.

            Serve: Remove from heat. Garnish with freshly chopped cilantro and serve warm with sliced avocado on the side.
