Ingredients

2 cups rolled oats

1 cup raw nuts (almonds, walnuts, or pecans), roughly chopped

1 cup seeds (pumpkin seeds, sunflower seeds, or a mix)

1/2 cup unsweetened coconut flakes

1/3 cup honey or maple syrup

1/4 cup coconut oil or olive oil

1 tsp vanilla extract

1/2 tsp ground cinnamon

1/4 tsp salt

1 cup dried fruits (raisins, cranberries, or apricots), chopped

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, seeds, coconut flakes, ground cinnamon, and salt. Stir until evenly mixed.

Combine Wet Ingredients: In a small saucepan over low heat, warm the honey (or maple syrup) and coconut oil until they are well combined and melted. Remove from heat and stir in the vanilla extract.

Combine Mixtures: Pour the wet mixture over the dry ingredients. Stir well until all the dry ingredients are evenly coated.

Spread and Bake: Spread the granola mixture evenly onto the prepared baking sheet. Bake for 20 to 25 minutes, stirring halfway through, until the granola is golden brown.

Add Dried Fruit: Once out of the oven, let the granola cool completely on the baking sheet, and then stir in the dried fruits.

Store: Once cooled, transfer your granola to an airtight container. It can be stored at room temperature for up to two weeks.

Enjoy your homemade granola as a nutritious breakfast or snack, served with yogurt or milk, or simply on its own!
