Ingredients
  

  • 4 pieces boneless skinless chicken breasts
  • 2 cups chicken broth
  • 1 cup cream of chicken soup
  • 1 medium onion finely diced
  • 2 medium carrots sliced into rounds
  • 2 stalks celery sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • to taste salt and freshly ground black pepper
  • 1 cup frozen peas
  • 1 can refrigerated biscuit or dumpling dough approximately 8 pieces

Instructions

  • Place the chicken breasts at the bottom of the crockpot and season with salt, pepper, garlic powder, thyme, and parsley.
  • Pour the chicken broth and cream of chicken soup over the chicken, then layer the onion, carrots, and celery on top.
  • Stir gently to combine all ingredients, then secure the lid.
  • Cook on low for 6-8 hours or on high for 4-5 hours until the chicken is tender.
  • Remove the chicken, shred it with two forks, and return it to the pot.
  • Stir in the frozen peas.
  • Cut each biscuit into quarters and drop them into the crockpot, spaced apart.
  • Cover and increase heat to high, cooking for an additional hour until dumplings are fluffy.
  • Serve hot, garnished with fresh parsley.
