1 cup corn (you can use fresh, frozen, or canned)

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

1 bay leaf

1 tablespoon olive oil

1 tablespoon apple cider vinegar

Fresh parsley, chopped, for garnish

Instructions

Begin by heating the olive oil in a skillet over medium heat. Add the diced onion and minced garlic, and sauté them together until the onion turns soft and translucent, which should take about 3–4 minutes.

    Transfer the sautéed onion and garlic mixture to your crockpot. Then pour in the vegetable broth and add the diced tomatoes along with their juice.

      Next, add in the diced carrots, potatoes, chopped celery, green beans, and corn to the crockpot, ensuring all the veggies are well combined.
