  • 5 lbs ground beef
  • 3 large onions diced
  • 4 cloves garlic minced
  • 4 medium bell peppers diced
  • 4 cans 15 oz kidney beans, drained and rinsed
  • 4 cans 15 oz black beans, drained and rinsed
  • 4 cans 28 oz crushed tomatoes
  • 2 cans 15 oz tomato sauce
  • 1 can 12 oz tomato paste
  • 8 tablespoons chili powder
  • 4 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon cayenne pepper
  • 4 teaspoons salt
  • 2 teaspoons black pepper
  • 1 tablespoon sugar
  • 4 cups beef or vegetable broth
  • 1 cup corn
  • optional toppings: shredded cheese sour cream, chopped green onions, cilantro

Instructions

  • In a large pot, heat over medium-high heat and add the ground beef. Cook until browned, then drain excess fat.
  • Add diced onions and minced garlic, sauté for about 5 minutes until soft.
  • Stir in diced bell peppers and cook for another 5 minutes.
  • Pour in crushed tomatoes, tomato sauce, and tomato paste, stirring to combine.
  • Fold in kidney beans and black beans, mixing evenly.
  • Season with chili powder, cumin, smoked paprika, cayenne, salt, black pepper, and sugar.
  • Gradually add broth and bring to a boil, then reduce heat and simmer for 1-2 hours.
  • About 15 minutes before serving, stir in corn and adjust seasoning as needed.
