Hearty Irish Chicken Dhansak Curry

500g boneless chicken thighs, diced

1 cup red lentils, rinsed

2 cups chicken broth

1 medium onion, finely chopped

3 cloves garlic, minced

1-inch piece ginger, grated

1 green chili, slit lengthwise (adjust for heat preference)

2 medium carrots, diced

1 bell pepper (red or green), diced

1 can (400g) coconut milk

2 tablespoons tomato paste

1 tablespoon tamarind paste (or lemon juice)

2 tablespoons oil (vegetable or coconut)

2 teaspoons garam masala

1 teaspoon turmeric powder

1 teaspoon cumin powder

1 teaspoon coriander powder

Salt and pepper to taste

Fresh cilantro for garnish

Sauté the Aromatics: In a large pot, heat the oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Then add the minced garlic, grated ginger, and slit green chili. Sauté for another 2 minutes until fragrant.

    Add the Chicken: Stir in the diced chicken and cook until it is browned on all sides, around 7-10 minutes. Season with salt and pepper.

      Introduce the Veggies: Add the diced carrots and bell pepper to the pot. Stir everything together and cook for another 5 minutes.

        Cook the Lentils: Add the rinsed red lentils, turmeric, cumin, coriander, tomato paste, and chicken broth. Bring the mixture to a boil, then reduce to a simmer. Cover and let it cook for 15-20 minutes until the lentils are soft.

          Incorporate Coconut Milk: Once the lentils are cooked, pour in the coconut milk and tamarind paste (or lemon juice). Stir well and let it simmer for another 10 minutes, allowing the flavors to meld together. Adjust seasoning if needed.

            Final Touches: Just before serving, stir in the garam masala. Garnish with fresh cilantro for a burst of freshness.
