Instructions
Heat olive oil in a large pot over medium heat.
Add onion and bell pepper, sauté for 5-7 minutes until softened.
Stir in garlic and cook for 1 minute.
Add ground beef, breaking it apart, and cook until browned, about 8-10 minutes.
Drain excess fat if necessary.
Add crushed tomatoes, kidney beans, chili powder, cumin, smoked paprika, and beef broth; mix well.
Season with salt and pepper, then bring to a simmer.
Reduce heat to low and simmer uncovered for 30 minutes, stirring occasionally.
Taste and adjust seasoning as needed before serving.
