  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 1 each bell pepper diced
  • 2 cans 15 oz each kidney beans, drained and rinsed
  • 1 can 28 oz crushed tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • to taste salt
  • to taste freshly ground black pepper
  • 1 cup beef broth
  • 1 tablespoon extra virgin olive oil

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add onion and bell pepper, sauté for 5-7 minutes until softened.
  • Stir in garlic and cook for 1 minute.
  • Add ground beef, breaking it apart, and cook until browned, about 8-10 minutes.
  • Drain excess fat if necessary.
  • Add crushed tomatoes, kidney beans, chili powder, cumin, smoked paprika, and beef broth; mix well.
  • Season with salt and pepper, then bring to a simmer.
  • Reduce heat to low and simmer uncovered for 30 minutes, stirring occasionally.
