  • 2 lbs ground beef
  • 1 large onion finely diced
  • 3 cloves garlic minced
  • 1 large green bell pepper finely diced
  • 1 large red bell pepper finely diced
  • 2 cans 14.5 oz each diced tomatoes, with juices
  • 1 can 15 oz kidney beans, rinsed and drained
  • 1 can 15 oz black beans, rinsed and drained
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon cayenne pepper
  • Salt and freshly cracked black pepper to taste
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • Optional toppings: shredded cheese sour cream, green onions, cilantro

Instructions

  • Warm olive oil in a large pot over medium heat and sauté diced onion until translucent.
  • Increase heat to medium-high, add ground beef, and cook until browned.
  • Add minced garlic and diced bell peppers, sauté for 5 minutes.
  • Stir in chili powder, cumin, paprika, oregano, cayenne, salt, and pepper.
  • Pour in diced tomatoes, kidney beans, black beans, and beef broth, mixing well.
  • Bring to a boil, then reduce heat and simmer for 45 minutes to 1 hour.
  • Taste and adjust seasoning; simmer uncovered for 15-20 minutes for a thicker chili if desired.
