Ingredients
  

  • 4 large boneless skinless chicken breasts
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil finely chopped
  • ¼ cup fresh parsley finely chopped
  • 1 tablespoon fresh thyme finely chopped
  • 1 teaspoon garlic powder

  • 1 cup marinara sauce
  • 1 tablespoon olive oil
  • ½ teaspoon red pepper flakes optional
  • toothpicks or kitchen twine

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a bowl, combine ricotta, Parmesan, basil, parsley, thyme, garlic powder, salt, and pepper.
  • Pound each chicken breast to about ½ inch thick.
  • Spread ¼ cup of the ricotta mixture on each chicken breast.
  • Roll the chicken breasts tightly and secure with toothpicks or twine.
  • Heat olive oil in a skillet over medium-high heat and sear the rolls until golden brown.
  • Pour marinara sauce over the chicken rolls and sprinkle with red pepper flakes if desired.
  • Transfer the skillet to the oven and bake for 25-30 minutes until cooked through.
  • Let the chicken rest for 5 minutes before removing toothpicks or twine.
  • Slice and serve with extra marinara sauce and garnish with fresh herbs.
