1 cup cooked quinoa (or brown rice)

1 cup black beans, rinsed and drained

1 cup diced bell peppers (red, green, or yellow)

1 cup corn (frozen or canned)

1 cup enchilada sauce (red or green)

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

Salt and pepper to taste

1 cup shredded cheese (Mexican blend or cheddar)

Fresh cilantro for garnish

1 avocado, sliced (optional)

Lime wedges for serving

Preheat Oven: Start by preheating your oven to 375°F (190°C).

    Mix the Base: In a large mixing bowl, combine the cottage cheese, cooked quinoa, black beans, diced bell peppers, corn, cumin, chili powder, garlic powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.
