Ingredients

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup buttermilk (or milk with 1/2 tablespoon vinegar)

2 cups peeled and diced apples (preferably Granny Smith or Honeycrisp)

1/2 cup brown sugar, packed

1 tablespoon ground cinnamon (for swirl)

1 tablespoon granulated sugar (for swirl)

Instructions

Prep the Oven and Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper for easier removal.

Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, approximately 3-4 minutes.

Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract until well combined.

Combine Wet and Dry Ingredients: Gradually add the dry mixture to the butter mixture, alternating with buttermilk. Start and end with the flour mixture. Mix until just combined; do not overmix.

Fold in Apples: Gently fold in the diced apples with a spatula until evenly distributed through the batter.

Prepare Swirl Mixture: In a small bowl, combine the brown sugar, ground cinnamon, and granulated sugar for the swirl.

Layer the Batter: Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon-sugar mixture on top. Pour the remaining batter over it and then sprinkle the rest of the cinnamon-sugar mixture on top of the loaf. Using a butter knife, gently swirl the mixture in the batter to create a marbled effect.

Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Let the loaf cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Slice and Serve: Slice the loaf and serve it warm or at room temperature, perhaps with a drizzle of icing or a pat of butter if you like!
