Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup BBQ sauce (your favorite brand or homemade)

1 cup crushed BBQ-flavored potato chips

1 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

Cooking spray or oil for frying

Instructions

Marinate the Chicken: In a large bowl, combine the chicken pieces with ½ cup of BBQ sauce. Stir well to ensure all pieces are coated. Cover and refrigerate for at least 1 hour (or overnight for best flavor).

Prepare Breading Station: Set up a breading station with three shallow dishes. In the first dish, place the flour mixed with garlic powder, onion powder, smoked paprika, salt, and pepper. In the second dish, beat the eggs. In the third dish, add the crushed BBQ chips.

Coat the Chicken: Remove chicken from the marinade, allowing excess sauce to drip off. Dredge each piece in the flour mixture, shaking off excess, then dip in the beaten eggs, and finally coat with the crushed BBQ chips. Ensure the chicken is well covered in each step.

Fry the Nuggets: Heat a large skillet or frying pan over medium heat and add enough oil or cooking spray to coat the bottom. Once hot, carefully add the coated chicken nuggets in batches, being careful not to overcrowd the pan. Cook for 3-4 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F).

Serve: Once cooked, remove the nuggets from the pan and place them on a plate lined with paper towels to absorb excess oil. Serve hot with remaining BBQ sauce for dipping. Enjoy your delicious homemade BBQ chip chicken nuggets!
