Honey Garlic Roasted Baby Carrots

1 lb baby carrots, peeled and trimmed

3 tbsp honey

3 tbsp olive oil

4 garlic cloves, minced

1 tsp fresh thyme leaves (or ½ tsp dried thyme)

1 tsp salt

½ tsp black pepper

1 tbsp apple cider vinegar

Fresh parsley, for garnish (optional)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine honey, olive oil, minced garlic, thyme, salt, black pepper, and apple cider vinegar. Whisk until well blended.

      Add the baby carrots to the bowl and toss them until they are evenly coated in the honey garlic mixture.

        Line a baking sheet with parchment paper for easy cleanup. Spread the coated carrots in a single layer on the baking sheet.

          Roast the carrots in the preheated oven for 20-25 minutes, tossing halfway through, until they are tender and caramelized, with slight charred edges.

            Remove from the oven and let them cool for a couple of minutes.

              Transfer the carrots to a serving dish and garnish with fresh parsley, if desired. Serve warm.
