Honey Lime Chicken & Avocado Rice Stack

1 lb (450g) boneless, skinless chicken breasts

1/4 cup honey

1/4 cup lime juice (freshly squeezed)

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

2 cups cooked jasmine rice

1 ripe avocado, diced

1/2 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

Juice of 1 lime (for rice)

Optional: sliced jalapeños for garnish

Instructions
 

Marinate the Chicken: In a bowl, whisk together honey, lime juice, minced garlic, chili powder, cumin, salt, and pepper. Add the chicken breasts and coat them evenly. Marinate in the refrigerator for at least 30 minutes, preferably 1-2 hours.

    Cook the Chicken: Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F/75°C). Allow the chicken to rest for a few minutes before slicing.

      Prepare the Avocado Rice: In a mixing bowl, combine the cooked jasmine rice, diced avocado, halved cherry tomatoes, chopped cilantro, and lime juice. Gently toss to combine and set aside.

        Assemble the Stacks: Using a ring mold or a large round cookie cutter, layer the avocado rice mixture at the bottom, then add slices of the grilled honey lime chicken on top. If desired, garnish with sliced jalapeños for a kick.
