When it comes to fried chicken, the type of meat you select can significantly affect the flavor and texture of the finished dish. For hot honey chicken biscuits, boneless, skinless chicken thighs are the ideal choice. Unlike chicken breasts, which can dry out when fried, chicken thighs offer a richer flavor and remain juicy throughout the cooking process. The extra fat in chicken thighs helps to keep the meat moist, resulting in a tender, flavorful bite that contrasts beautifully with the crispy coating.

Ingredients

1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper, to taste

Vegetable oil, for frying

1/2 cup honey

1-2 teaspoons crushed red pepper flakes (adjust for spice preference)

8 flaky biscuits (store-bought or homemade)

Optional: fresh herbs (like thyme or parsley) for garnish

Instructions

Marinate the Chicken: In a bowl, combine the chicken thighs and buttermilk. Season with salt and pepper. Cover and refrigerate for at least 1 hour or overnight for best flavor.

Prepare the Honey Sauce: In a small saucepan over low heat, combine honey and crushed red pepper flakes. Stir until well mixed and heated through, then set aside.

Set Up for Frying: In a large bowl, combine flour, baking powder, baking soda, paprika, garlic powder, salt, and pepper. Mix well. Heat vegetable oil in a deep skillet or frying pan until it reaches 350°F (175°C).

Bread the Chicken: Remove the marinated chicken from buttermilk, allowing excess to drip off. Dredge each piece in the seasoned flour mixture, coating thoroughly. Shake off any excess flour.

Fry the Chicken: Carefully place the coated chicken thighs into the hot oil, frying in batches to avoid overcrowding. Cook for about 4-5 minutes per side, or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C). Remove and drain on paper towels.

Assemble the Biscuits: If using store-bought biscuits, prepare them as directed. If making homemade, bake your biscuit dough according to the recipe.

Build the Biscuit Sandwich: Split each biscuit in half. Place a piece of hot fried chicken on the bottom half of each biscuit. Drizzle generously with hot honey. If desired, sprinkle with fresh herbs for an added touch.

Top & Serve: Place the top half of the biscuit on the chicken and serve immediately while hot. Enjoy the combination of crispy chicken with the sweet, spicy honey!
