Ingredients

2 cups apple cider

2 cups all-purpose flour

1 cup granulated sugar

2 tsp baking powder

1/2 tsp baking soda

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp salt

1/2 cup unsalted butter, melted

2 large eggs

1/2 cup buttermilk

1 tsp vanilla extract

Cinnamon sugar for coating (1/2 cup granulated sugar mixed with 2 tsp cinnamon)

Instructions

Reduce the Apple Cider: In a small saucepan, bring the apple cider to a boil over medium-high heat. Reduce the heat to medium-low and let it simmer until it is reduced to about 3/4 cup (approximately 15-20 minutes). Remove from heat and let cool.

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick cooking spray.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

Combine Wet Ingredients: In another bowl, whisk together the melted butter, eggs, reduced apple cider, buttermilk, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix.

Fill the Donut Pan: Using a piping bag or a spoon, fill each cavity of the donut pan about 3/4 full with the batter.

Bake: Bake the donuts for about 10-12 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow them to cool in the pan for about 5 minutes.

Coat with Cinnamon Sugar: While the donuts are still warm, gently remove them from the pan and roll them in the cinnamon sugar mixture until well coated.

Serve and Enjoy: Allow the donuts to cool completely on a wire rack. They are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
