Ingredients
  

  • 4 large russet potatoes
  • 2 cups sharp cheddar cheese grated
  • 1 cup Gruyère cheese grated
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 2 cups heavy cream
  • 2 cups milk
  • 1 tablespoon Dijon mustard
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon ground nutmeg
  • ½ cup breadcrumbs optional for topping
  • Fresh chives chopped (for garnish)

Instructions

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13 inch baking dish with unsalted butter.
  • In a skillet, melt butter and sauté onion until translucent, then add garlic and cook for another minute.
  • In a saucepan, combine cream, milk, mustard, salt, pepper, and nutmeg; heat until just about to simmer.
  • Stir in half of the cheddar and Gruyère cheese until melted and smooth.
  • Layer half of the potatoes in the baking dish, followed by half of the onion mixture and half of the cheese sauce; repeat layers.
  • Top with remaining cheddar and Gruyère cheese, and breadcrumbs if desired.
  • Cover with foil and bake for 45 minutes, then remove foil and bake for an additional 15-20 minutes until golden.
  • Garnish with chives and serve warm.

Notes

For a crunchy topping, add breadcrumbs before baking.
