2 cups rolled oats

2 large apples, peeled and diced (preferably Granny Smith or Honeycrisp)

1/4 cup honey or maple syrup (adjust for sweetness)

2 cups almond milk (or any milk of your choice)

2 large eggs (or flaxseed eggs for a vegan option)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or dried cranberries (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish with cooking spray or a bit of coconut oil.

    In a large mixing bowl, combine the rolled oats, diced apples, ground cinnamon, baking powder, and salt. If using, mix in the chopped nuts and dried fruits.

      In another bowl, whisk together the almond milk, honey or maple syrup, eggs, and vanilla extract until well combined.

        Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.

          Allow the mixture to sit for about 10 minutes to let the oats absorb some liquid.

            Pour the combined mixture into the prepared baking dish and spread it evenly.

              Bake in the preheated oven for 35-40 minutes or until the top is golden brown and the center is set.

                Once baked, remove from the oven and let it cool slightly before slicing.
