2 cups all-purpose flour

1 ½ teaspoons baking powder

1 teaspoon baking soda

½ cup unsalted butter, softened

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 cup plain Greek yogurt (or sour cream)

1 ½ cups peeled and diced apples (about 2 medium apples)

½ cup chopped walnuts or pecans (optional)

2 tablespoons granulated sugar (for topping)

1 teaspoon ground cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.

    Mix Dry Ingredients: In a medium-sized bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.

      Cream Butter and Sugar: In a large bowl, using an electric mixer, cream the softened butter and brown sugar together until it's light and fluffy, about 3-5 minutes.

        Add Eggs and Vanilla: Beat in the eggs, one at a time, making sure each egg is fully incorporated before adding the next. Stir in the vanilla extract.
