2 cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp salt

1/2 cup unsalted butter, melted

3/4 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 cup plain Greek yogurt (or sour cream)

2 cups peeled and diced apples (Granny Smith or Honeycrisp work well)

1/2 cup chopped walnuts or pecans (optional)

1/4 cup granola (for topping, optional)

Instructions

Preheat the Oven: Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.

    Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt. Set aside.

      Mix Wet Ingredients: In a large mixing bowl, beat the melted butter, brown sugar, and granulated sugar until combined. Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract and Greek yogurt until smooth.

        Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix. Gently fold in the diced apples and nuts (if using) until evenly distributed.

          Fill Muffin Tins: Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full. If desired, sprinkle granola on top of each muffin for added crunch.

            Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.

              Cool: Once baked, remove the muffins from the oven and allow them to cool in the tin for about 5 minutes. Then transfer them to a wire rack to cool completely.
