Italian Stuffed Cabbage Rolls

Ingredients
  

1 large head of green cabbage

1 lb ground beef (or a mix of beef and pork)

1 cup cooked arborio rice (or any short-grain rice)

1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) crushed tomatoes

1 tablespoon tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Cabbage: Bring a large pot of salted water to a boil. Carefully remove the core from the cabbage and gently peel off the outer leaves. Blanch the leaves in boiling water for about 2 minutes until softened. Remove and place in a colander to drain. Set aside to cool.

    Make the Filling: In a large skillet over medium heat, add a drizzle of olive oil. Sauté the chopped onion for about 5 minutes until translucent. Add the minced garlic and cook for an additional minute. Remove from heat and let cool slightly.

      Combine Ingredients: In a large bowl, mix together the ground beef, cooked rice, sautéed onion and garlic, half of the crushed tomatoes, tomato paste, oregano, basil, red pepper flakes (if using), salt, pepper, and Parmesan cheese until well combined.

        Stuff the Cabbage Leaves: Take a blanched cabbage leaf, place about 2-3 tablespoons of the filling at the base of the leaf, fold in the sides, and roll it up tightly. Repeat this step with the remaining leaves and filling.

          Prepare for Baking: Preheat your oven to 350°F (175°C). Spread the remaining crushed tomatoes at the bottom of a large baking dish. Place the stuffed rolls seam-side down in a single layer over the tomatoes.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15 minutes, allowing the rolls to slightly brown on top.
