8 oz fettuccine or your favorite pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1/2 onion, finely chopped

1 bell pepper (red or yellow), sliced

1 teaspoon thyme (fresh or dried)

1 teaspoon allspice

1/2 teaspoon cayenne pepper (adjust for spice preference)

1 cup coconut milk

1/4 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and black pepper to taste

Fresh parsley or cilantro for garnish

Lime wedges for serving

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion. Sauté until fragrant and the onion is translucent (about 3 minutes).

      Add the Bell Pepper: Stir in the sliced bell pepper and cook for an additional 2-3 minutes, allowing it to soften.

        Cook the Shrimp: Add the shrimp to the skillet. Season with thyme, allspice, cayenne pepper, salt, and black pepper. Cook until the shrimp are pink and cooked through, about 4-5 minutes. Stir occasionally to ensure even cooking.

          Create the Sauce: Pour in the coconut milk and heavy cream, stirring to combine. Allow the sauce to simmer for 3-5 minutes until it starts to thicken.

            Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat the pasta in the creamy sauce. If the sauce is too thick, add reserved pasta water, a little at a time, until you reach your desired consistency.

              Cheese It Up: Stir in the grated Parmesan cheese until melted and well incorporated. Taste and adjust seasoning as necessary.

                Serve: Remove from heat and garnish with fresh parsley or cilantro. Serve hot with lime wedges on the side for extra zing.
