Ingredients

8 oz pasta (fettuccine or linguine)

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 tablespoon butter

1 small onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, sliced

1 teaspoon allspice

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

1 cup coconut milk

1/2 cup heavy cream

Salt and pepper to taste

1/4 cup fresh cilantro, chopped

1 lime, juiced

Grated Parmesan cheese (for serving)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Sauté Shrimp: In a large skillet, heat olive oil and butter over medium heat. Add shrimp and season with salt, pepper, allspice, paprika, and cayenne. Cook the shrimp for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Create the Sauce: In the same skillet, add the chopped onion and red bell pepper. Sauté until the onion is translucent, about 3-4 minutes. Add garlic and cook for an additional minute until fragrant.

Combine Ingredients: Pour in the coconut milk and heavy cream, stirring to combine. Bring the mixture to a gentle simmer. Allow it to thicken for about 5 minutes, stirring occasionally.

Mix Shrimp & Pasta: Add the cooked shrimp back into the skillet along with the drained pasta. Toss to coat the pasta in the creamy sauce. If the sauce is too thick, gradually add the reserved pasta water until the desired consistency is reached.

Finishing Touches: Stir in the lime juice and chopped cilantro. Taste and adjust seasoning if necessary.

Serve: Divide the creamy shrimp pasta into bowls, topping with grated Parmesan cheese and additional cilantro for garnish. Enjoy your Jamaican Shrimp Pasta!
