Ingredients

For the Meatballs:

1 lb (450 g) ground beef (preferably ground brisket)

1/2 cup breadcrumbs (preferably panko)

1/4 cup green onions, finely chopped

2 tablespoons soy sauce

2 tablespoons gochujang (Korean chili paste)

1 tablespoon sesame oil

1 tablespoon garlic, minced

1 tablespoon ginger, grated

1 tablespoon brown sugar

1 large egg

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1 tablespoon gochujang (adjust for heat preference)

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon honey (optional for sweetness)

Instructions

Prepare the Meatball Mixture: In a large bowl, combine ground beef, breadcrumbs, green onions, soy sauce, gochujang, sesame oil, minced garlic, grated ginger, brown sugar, and egg. Mix until just combined; avoid overmixing to keep them tender.

Form the Meatballs: Preheat the oven to 400°F (200°C). Using your hands, shape the mixture into meatballs that are about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

Bake the Meatballs: Bake in the preheated oven for 15-20 minutes, or until they're browned and cooked through, reaching an internal temperature of 165°F (75°C).

Prepare the Spicy Mayo Dip: While the meatballs are baking, combine the mayonnaise, gochujang, lime juice, garlic powder, and honey in a small bowl. Whisk until smooth and creamy. Adjust seasoning to taste.

Serve: Once the meatballs are done baking, let them cool slightly before serving. Enjoy them warm with the spicy mayo dip on the side.

            Prep Time: 15 minutes | Total Time: 35 minutes | Servings: 4-6
