Ingredients

1 lb (450g) ground beef

4 cloves garlic, minced

1-inch piece of ginger, grated

1/4 cup soy sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

1 tablespoon gochujang (Korean chili paste)

1 teaspoon rice vinegar

1/2 teaspoon black pepper

1 cup sliced carrots

1 cup chopped broccoli

2 green onions, chopped

2 cups cooked rice (white or brown)

Sesame seeds for garnish

Kimchi (optional, for serving)

Instructions

Prepare the Sauce: In a bowl, combine the soy sauce, brown sugar, sesame oil, gochujang, rice vinegar, and black pepper. Stir well until the sugar dissolves and the mixture is smooth. Set aside.

Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned and crumbled, about 5-7 minutes. Drain excess fat if necessary.

Add Aromatics: Add the minced garlic and grated ginger to the skillet with the ground beef. Stir and cook for an additional 1-2 minutes until fragrant.

Incorporate Vegetables: Add the sliced carrots and chopped broccoli to the skillet with the beef. Stir well and cook for 4-5 minutes, or until the vegetables are tender but still crisp.

Add Sauce: Pour the prepared sauce over the beef and vegetable mixture. Stir everything together, ensuring the beef and veggies are well coated in the sauce. Allow it to simmer for another 2-3 minutes to heat through.

Assemble the Bowls: Divide the cooked rice among serving bowls. Top with the Korean ground beef mixture.

Garnish: Sprinkle chopped green onions and sesame seeds over each bowl. Serve with kimchi on the side if desired.
