200g chicken breast, diced

150g egg noodles

1 red bell pepper, diced

1 green bell pepper, diced

2 green onions, chopped (whites and greens separated)

2 cloves garlic, minced

1 tbsp fresh ginger, grated

50g roasted peanuts

2 tbsp soy sauce

1 tbsp rice vinegar

1 tbsp hoisin sauce

1 tbsp chili paste (adjust based on spice preference)

1 tsp sesame oil

2 tbsp vegetable oil (for cooking)

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Sauce: In a small bowl, whisk together soy sauce, rice vinegar, hoisin sauce, chili paste, and sesame oil. Set aside.

      Cook the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the diced chicken and season with salt and pepper. Stir-fry for about 5-7 minutes, or until the chicken is browned and cooked through. Remove from the skillet and set aside.

        Stir-fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Toss in the minced garlic, grated ginger, and the white parts of the green onions. Stir-fry for 1-2 minutes until fragrant. Add the diced red and green bell peppers, and stir-fry for another 3-4 minutes until the vegetables are tender-crisp.

          Combine Ingredients: Return the cooked chicken to the skillet with the vegetables. Pour in the prepared sauce and mix well to ensure everything is coated. Add the cooked noodles and toss to combine all the ingredients thoroughly.

            Add Peanuts: Sprinkle the roasted peanuts over the top and toss to mix them into the noodles.
