8 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

Zest and juice of 1 lemon

1 cup fresh spinach, roughly chopped

1/2 cup cherry tomatoes, halved

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest. Set aside.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp, season with salt and pepper, and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Make the Sauce: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

        Combine Ingredients: Add the cherry tomatoes, lemon zest, and lemon juice to the skillet. Cook for an additional 2-3 minutes until the tomatoes are softened.

          Incorporate the Spinach: Stir in the chopped spinach and cook until wilted, about 1-2 minutes.

            Toss with Pasta: Return the shrimp to the skillet along with the cooked pasta. If the mixture seems dry, add a little reserved pasta water to achieve the desired consistency. Toss everything together gently until well combined.

              Serve: Remove from heat and garnish with fresh parsley. Serve immediately with grated Parmesan cheese on top if desired.
